Heritage Single Vineyard Shiraz

Juniper Estate Heritage Single Vineyard Shiraz draws from old, dry grown Shiraz vines planted on the winery's Margaret River vineyard in 1973. The grapes are hand harvested.
Most of the fruit is destemmed with a small portion left as whole bunches. After several days of cold soaking, fermentation occurs in hand plunged open fermenters and open top barrels.
The batches are left for varying periods on skins before they are transferred to one third new French oak hogsheads for maturation on fine lees. Some lees stirring is used to build texture.
After 18 months, individual barrels are carefully selected to create the final blend.
Deep crimson, Juniper Estate Heritage Single Vineyard Shiraz is medium bodied with berry flavours, spice and finely structured tannins. Cellaring potential is 10 years.
